Winemaker's Notes
This well balanced white wine has notes of juicy peaches, soft citrus and pear. An acidic backbone but surprisingly smooth and creamy.
Destemmed grapes fermented in open top fermentation vessels using natural wild yeasts from the environment instead of cultured yeast which allows for a greater terroir expression from the vineyard. Fermented in stainless steel, between 17-20°C.
Pair with soft cheeses, crisp Ardiel apples or a honey baked ham.
